Sausage Spanish Rice
Savory sausage mixed with tomato-simmered rice, bell peppers, and spices. A filling one-pan dish that’s bold in flavor and easy to prepare.
Ingredients:
- 1 pound fully cooked kielbasa or polish sausage, cut into 1/4-inch slices
- 2 (14.5 ounce) cans diced tomatoes, undrained
- 2 cups water
- 1 1/2 cups uncooked parboiled (converted) rice
- 1 cup salsa
- 1 medium onion
- 1/2 cup chopped green pepper 1/2 cup chopped sweet red pepper
- 1 (4 ounce) can chopped green chilies
- 1 (1.25 ounce) package taco seasoning
Directions:
- In a slow cooker, combine all ingredients; stir to blend. Cover and cook on low for 5-6 hours or until rice is tender.
