North Carolina BBQ Sauce

Vinegar-forward with a spicy, peppery edge. This iconic sauce is thin, sharp, and perfect for cutting through fatty pulled pork. A true Carolina classic.

Ingredients:

  • 1 gallon white vinegar
  • 1 1/3 cups cayenne pepper
  • 1 1/8 cups ground black pepper 3/4 cup mustard powder
  • 1/2 cup salt 3 lemons
  • 2 (10 fluid ounce) bottles worcestershire sauce

Directions:

  • Combine the vinegar, cayenne pepper, black pepper, mustard powder, salt, lemons, and Worcestershire sauce in a large pot; bring to a simmer. Bring to a boil, then turn heat to low and simmer for at least 30 minutes.
