Maria s Spanish Rice

A classic Spanish rice recipe with tomato sauce, garlic, onion, and spices. Fluffy and flavorful, it’s a popular side dish for tacos, enchiladas, or grilled meats.

Ingredients:

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced 1 clove garlic, minced
  • 1 1/2 cups uncooked white rice 3 cups water
  • 1 (4 ounce) jar diced pimento peppers, drained

Directions:

  • Heat oil in a medium skillet over medium heat. Saute onion and garlic until golden. Stir in rice and saute until rice begins to brown. Add water and simmer for 10 minutes.
  • Stir in pimentos. Reduce heat, cover and cook until all water is absorbed, about 10 to 15 minutes.
