Confetti Beans and Rice with Chicken
Colorful bell peppers, beans, and rice combined with seasoned chicken. A hearty and vibrant dish packed with protein and fiber.
Ingredients:
- 1 cup minute® brown rice, uncooked
- 2 teaspoons dijon mustard 1/2 cup light caesar salad dressing
- 1 (15 ounce) can black beans, drained and rinsed
- 12 ounces cooked chicken, diced 1 (11 ounce) can mexican-style corn, drained
- 4 green onions, thinly sliced 2 large tomatoes, halved and hollowed out
Directions:
- Prepare rice according to package directions.
- Combine Dijon mustard and Caesar salad dressing in large bowl.
- Toss in rice, beans, chicken, corn and green onions. Fill tomatoes with mixture. Chill or serve at room temperature.
