Classic Rice Salad
A light and refreshing salad with cooked rice, fresh vegetables, and a tangy vinaigrette. Great for potlucks or as a side dish, it's easy to customize with your favorite add-ins like olives or herbs.
Ingredients:
- 2 cups minuteВ® white rice, uncooked
- 1/2 cup onions, chopped 1/2 cup sweet pickle relish 1/2 teaspoon salt
- 1/2 cup light mayonnaise
- 2 teaspoons prepared mustard 1/4 cup pimentos, chopped
- 2 eggs, hard cooked, chopped
Directions:
- Prepare rice according to package directions. Mix all ingredients. Chill.
- Serve on lettuce leaves, if desired.
