Pancake
Carrot and raisin pancakes
grain free, sugar free but not taste free, pancakes with sneaky veggies.
Ingredients:
- 4 eggs
- 4 carrots, peeled and grated
- 1/4 cup raisins
- 1 cup arrowroot
- 1/2 cup coconut milk
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- salt, pinch
- 3 tablespoons butter
- 1/4 cup macadamias
- 1 tablespoon maple syrup
- salt, pinch
- butter, for sauteeing
Directions:
- For pancakes - Combine eggs, carrots, raisins, coconut milk, arrowroot, baking soda, cinnamon and salt.
- For maple nut butter - combine butter, macadamias, maple and salt in food processor.
- Sautee pancakes 1/4 cup at a time in well greased pan. I put made pancakes in the over on low so they're all ready at once.
- Add a dollop of your maple nut butter to each pancake. Bacon, which goes with everything is delicious with these too
