Beefy Spanish Rice

Ground beef cooked with rice, tomatoes, peppers, and spices for a robust one-pot meal with a Spanish flair.

Ingredients:

  • 1 cup uncooked brown rice 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (28 ounce) can stewed tomatoes 1 teaspoon celery salt
  • 1 teaspoon salt
  • 1 teaspoon honey
  • 1/2 teaspoon garlic salt 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese

Directions:

  • Cook rice according to package directions. Meanwhile, in a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomatoes, seasonings and rice. Transfer to a greased 2-qt. baking dish. Cover and bake at 350В°: for 50-55 minutes.
  • Sprinkle with cheese. Bake, uncovered, 5-10 minutes longer or until cheese is melted.
