Banana Bread
Banana Oat Blender Pancakes
Hearty, gluten-free pancakes you can make entirely in your blender.
Ingredients:
- 1 cup non-dairy milk
- 2 cups rolled oats
- 1 medium ripe banana
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 pinch salt
- optional: favorite topping like fresh fruit, jam, chocolate chips, etc
Directions:
- Add the rolled oats to your blender and blend until you have a fine flour (1-2 mins)
- Toss in all other ingredients and blend until smooth.
- Heat a pan or skillet.* Pour or scoop out approximately ¼ cup of batter. When the edges start to become solid and bubbles form, flip! Repeat for the remaining batter. Plate and tops with more banana, syrup or your favorite toppings!
