Air Fryer Fried Chicken

In this healthy air-fried chicken recipe, we dredge the chicken twice in the flour mixture, resulting in a deliciously crisp exterior. Buffalo-style hot sauce adds subtle heat to these juicy drumsticks. Serve alongside mashed potatoes and green beans.

Ingredients:

  • 6 medium chicken drumsticks, skin-on
  • 1 teaspoon kosher salt, divided
  • 1 teaspoon ground pepper, divided
  • 2 cups whole buttermilk
  • 2 large eggs, lightly beaten
  • 2 teaspoons buffalo-style hot sauce
  • 2 cups all-purpose flour
  • 3 tablespoons salt-free creole seasoning
  • olive oil cooking spray

Directions:

  • Place chicken on a cutting board and pat dry with paper towels. Season the chicken all over with 1/2 teaspoon each salt and pepper.
  • Whisk buttermilk, eggs and hot sauce in a medium bowl until well combined. Combine flour, Creole seasoning and the remaining 1/2 teaspoon each salt and pepper in a separate medium bowl.
  • Preheat air fryer to 365°F for 2 minutes. Lightly coat the air-fryer basket with cooking spray.
  • Fit a wire rack on a rimmed baking sheet. Dredge 1 drumstick in the flour mixture, then dip in the buttermilk mixture, allowing excess to drip off; dredge again in the flour mixture until well coated. Place the drumstick on the prepared rack. Repeat the procedure with the remaining drumsticks.
  • Working in batches, place the drumsticks in the prepared basket, making sure they are evenly spread apart. Cook for 10 minutes. Coat each drumstick with cooking spray, making sure to cover any visible flour. Gently flip the drumsticks; cook until golden brown and crispy, about 10 minutes. Transfer to a serving platter; serve immediately.
