In the Catholic calendar it is Shrove Tuesday because the devout attended confession on that day to be shriven of their sins before beginning their Lenten practice. My mother made us these pancakes for dessert or an after school snack usually with orange juice and powdered sugar. There is no law against eating them for breakfast or with a midmorning cup of tea.

I moved to the East coast in '91 and stopped making them with Meyer lemons, because until fairly recently I haven't been able to find Meyer lemons. We moved to Wyoming three years ago, and the lemons are available seasonally. We made these pancakes three times this year, and probably won't make them again until this time next year.

It was in the winter time, and the Mistral had been blowing something strong for several days in a row, and it called for some serious comfort food... My wife made this pancake for writer and Nobel laureate, Elie Wiesel, and he gobbled it down. You be the judge!]
