Perfect Pancakes
I love pancakes. I have tried many different recipes but I always come back to the one my mother made for me as a child. She altered the fruit with the season: blueberries in the summer, apples in the fall and winter. You can skip the fruit altogether and the pancakes will still be perfect. I use a cast iron pan, which requires extra butter for cooking the pancakes, rather than non-stick cookware. Don't forget the bacon.
Almond Meal Pancakes with Blueberries

As a special treat some time when we have Chinese we get duck pancakes, and when i saw a duck on special offer i had to make crispy duck and Pancakes. The restaurant i work at has a crispy duck starter and i have lost count how many ducks i have roasted off, however this was the first time i have made pancakes for the duck. This is a really simply recipe, ideal for parties or to impress. It can be kept for a lengthy period of time so is an ideal dish to prep before. The sauce can be made days in advanced, this allows the sauce to mature and strengthen in flavor. However the sauce still tastes nice, made on the day.
Green Chile and Chorizo Potato Pancakes
Green chile, chorizo, and potato breakfast tacos are my absolute favorite. Unfortunately there is a dearth of good store bought tortillas in New York City (suggestions, anyone?!) so when I crave these flavors I mix them into a potato pancake instead of a taco. These are great on their own or with a fried egg. This recipe serves two but can be doubled, halved or tripled as needed. Everything can be done in advance and put together right before cooking.
Matcha Pancakes
I took my go-to recipe for pancakes from The New Best Recipe and added matcha for a twist on this American classic. I like to use Lupicia's matcha powder for baking, which is less expensive than the drinking-grade matcha and has a beautiful bright green color. 1 tablespoon is a good place to start but, depending on the quality of matcha you use, can be adjusted accordingly.

So when she was married in a lovely, quiet vineyard in the Napa Valley, her menu naturally featured Asian foods. Small stations were set up all around the property, some serving cold foods, and some hot foods prepared before a fascinated audience.
Mom s Curried Chicken Pancakes
My mom was a terrific cook . Raised as a sheltered Southern small town girl , once she left home and adapted to the life of a peripatetic Naval officer's wife, she embraced the world of International cooking with a passion. One of her (and our) favorite buffet dinners was a kind of American curried chicken Rijsttafel (popular at the time), where a creamed chicken curry over rice was topped with your choice of many condiments . She also used to make curry chicken pancakes for hors d'oeuvre, but they were rather simple compared to the many flavored buffet dish. In these pancakes, I have combined the two dishes to make moist and creamy entree pancakes filled with curried chicken, cooked grains, toasted coconut , crunchy onion rings, raisins and green pepper. They would be equally at home as hors d'oeuvre but we enjoy having them for dinner, as a delightful and memory-filled excuse to use up leftover chicken and grains.
Bread Pudding Pancakes

You can use any syrup you have on hand, but if you have a few extra minutes, the homemade syrup is worth the effort. This recipe serves two (with syrup to spare), but you can easily double or triple it.

The batter is not too sweet and could be great with other add ins (to replace the banana and chocolate chips) like fresh or frozen fruit, nut butters or coconut. They're also dead simple to throw together as a last minute brunch for unexpected guests! Please give them a try, especially if you're on a restricted diet!
