Breakfast Fried Rice

When you think of breakfast, fried rice is probably not the first thing that pops into your head. In fact, it may be nowhere on your radar. Growing up with a Japanese father, we always had a pot of cooked rice at the ready and when we had leftovers (which was often), my father would make breakfast fried rice in the morning. This is my take on a childhood favorite.

BEAT Breakfast Sandwich

This version combines bacon, egg, avocado, and cherry or grape tomatoes. I find that cherry tomatoes pack more flavor per bite than sliced tomatoes most of the year, but if you have some good heirloom slicers, feel free to substitute.

Salvadoran Breakfast Cake

Think cheesy poundcake. Think party food. Think happy mornings, popping a few too many quesadillas in your mouth. In El Salvador they eat rich, buttery quesadillas in the morning with a big cup of coffee and I suggest you do the same. You’ll love the slight crunch of the sesame seeds in combination with the sweet/salty cake.

Breakfast Cookies

Named for their wholesome and earthy ingredients like rolled oats and flax seeds, these are nonetheless huge, gooey, and full of chocolate. My Sunday school teacher in high school made them every week. —HMMessinger

Pumpkin Breakfast Parfait

I stole this idea from a friend of mine who brought pumpkin and yogurt parfaits to breakfast meetings in the fall. It's a perfect start to a brisk fall or winter day, with sweet pumpkin, warm spices, and tangy yogurt. —fiveandspice

Speculoos Breakfast Cake

If a speculoos biscuit is a Pokemon (stay with me), then this cake is its final evolution. The original cookies become spread  ( which is perfect on apples or straight from the jar )  and that spreads becomes a simple breakfast cake. I would take a sheet of this moist cake, with it's subtle warm spice, over a Charizard any day. —Kendra Vaculin

French Toast Casserole

A hearty, oven-baked twist on traditional French toast, combining bread, eggs, milk, and spices into a rich, custardy dish perfect for feeding a crowd at breakfast or brunch.

Early Bird Breakfast Tacos

This past summer, my sister and I opened up a gourmet taco cart in downtown Bloomington, Indiana. Eventually, life took over (she was in school, and I was working full-time), so we left the street-food business, but not before some insanely delicious taco recipes were born.

Warm and Nutty Breakfast Couscous

After long Sunday morning hikes, my husband and I love a healthy, satisfying breakfast that is packed with good carbs and protein. This warm and nutty breakfast couscous is a staple for us. It's chock-full of protein-rich seeds and nuts and is sweetened with ground cinnamon and pure maple syrup. Pepitas are flat, green Mexican pumpkin seeds found at Mexican markets, health food stores, and some major supermarkets. Unsalted pumpkin or sunflower seeds make good substitutes. —Food Blogga

A fusion of French toast and waffles, dusted with cinnamon and sugar. Crispy outside, tender inside—perfect for kids or anyone who loves extra texture and sweetness.

A variation inspired by German flavors, typically denser bread and spiced custard. Rich, slightly tangy, and ideal served with fruit or syrup.
