I prefer to start my day with something savory. So for pancakes I thought I can go mid way and mix savory with sweet. Pears and Gorgonzola is match made in heaven, so why not make it into a pancake?! If you want them on the sweeter side drizzle honey on top instead of the arugula, though the peppery arugula just make it tastier.
Boozy Bourbon Eggnog Pancakes
Although eggnog is one of my favorite holiday flavors, it seems like every season I can never quite get through the whole carton. I thought this year’s leftover eggnog might serve as the inspiration for a great new pancake recipe and a superb holiday breakfast. I love the pancake recipe from folks at Cook’s Illustrated. In their version, the egg is separated and the yolk is mixed in to the melted butter. This process means you don’t have to wait for cold ingredients to reach room temperature and the melted butter mixes evenly throughout the batter.
Orange Oatmeal Yogurt Pancakes with Huckleberries
Huckleberries, abundant in the Northwest, are the star of this hearty pancake, but if you don't have access to them, blueberries will also work great! Packed with oatmeal, vanilla yogurt, orange zest, honey, and juicy berries, this pancake is great even without a topping, but I like to mix up a little huckleberry-orange sauce to give it an extra kick.

I started making this recipe when I was in school in Santa Cruz, California in the 1980's. I moved to the East coast in '91 and stopped making them with Meyer lemons, because until fairly recently I haven't been able to find Meyer lemons. We moved to Wyoming three years ago, and the lemons are available seasonally. We made these pancakes three times this year, and probably won't make them again until this time next year.

I love raclette cheese. I love potatoes. This idea for putting the two together in this way came to me while I was living in Avignon, France. It was in the winter time, and the Mistral had been blowing something strong for several days in a row, and it called for some serious comfort food...
