Tofu and Noodle Coconut-Curry Soup
Silken tofu and rice noodles are served in a fragrant coconut curry broth with ginger, garlic, and vegetables. A warm, comforting vegan soup with Thai-inspired flavors and satisfying textures.
Banana Oat Pancakes
Super easy, super Saturday morning pancakes. Normally, I prefer the superior crispy texture of waffles to needlessly airy, tasteless pancake blobs (I’m clearly working through some bad diner pancake experiences). However, these pancakes have a great texture, are a little bit moist, and have a slightly sweet, nutty taste to start your weekend off right.
Cachapas Venezuelan fresh corn pancakes
This is the number one reason I dream about corn season, since this recipe works best with fresh sweet corn. This dish is eaten warm with cheese. The texture of the cakes is very moist and even though its sweetness contrast well with the salty cotija cheese it can be eaten on its own.
Farinata Ligure chickpea pancake
My husband is from Liguria (the birth place of farinata) but we live in Milan. Every so often to bring the taste of Liguria to our house I'll make this farinata for him. In Liguria farinata is considered street food, almost never made at home. Traditionally it's made using a well seasoned copper pan and a wood burning oven. My husband the food traditionalist required that I specify this. After countless attempts, this is the (no copper or cast iron required) recipe we have deemed closest to the one you can taste on the streets of Genova, where his grandma still lives and where legend has it the recipe was conceived almost 800 years ago!
Pea Pancakes with Herbed Feta Cream and Cured Ham
This is a quick and easy brunch recipe. It's adapted from a recipe by Domini Kemp. It's a great base for loads of different toppings like smoked salmon, blue cheese, ham or crab. I've been using this as a base for using up Christmas leftovers. You can also make mini pancakes to serve as a canapes.
Salted Caramel Apple Dutch Baby Pancake
I have been making this for my 3 boys since they were toddlers. I sometimes substitute blueberries or peaches for the apples and use baking sugar instead of brown sugar. It is usually something I make on the weekends, but also make on their birthdays.
Perfect Buttermilk Pancakes
Ever been so hungry on a Saturday morning that you resort to using boxed mixes or frozen pancakes for a quick fix? Forget it. Just use a few sample pantry staples to whip up a delightful batch of these perfect buttermilk pancakes. They're everything you want from a pancake recipe - endlessly adaptable (like chocolate chip? blueberries? nuts and banas? add em before you add the whipped egg whites), light and fluffy, and sweet as can be without any sugar at all!
Shrove Tuesday Pancakes
In New Orleans, the Tuesday before the beginning of Lent is called Mardi Gras. In Dublin, it is Pancake Tuesday, because it is the last day to use up eggs and butter before Ash Wednesday marks the start of 40 days of Lenten fasting. In the Catholic calendar it is Shrove Tuesday because the devout attended confession on that day to be shriven of their sins before beginning their Lenten practice. My mother made us these pancakes for dessert or an after school snack usually with orange juice and powdered sugar. There is no law against eating them for breakfast or with a midmorning cup of tea.
Kooie Kaka North Iranian Pumpkin Pancakes
Believe it or not these lovely pancakes are originally from Iran, Gilān. Gilān is in up north, close to the caspian sea, a very humid and green place, with lots of friendly people and a great food culture. A place close to Iranian turkish regions and Azerbaijan. Sea culture, farms, fishing shores and rice fields are part of this beautiful land.

Rice Pancakes With Ham & Tomato Basil Sauce From Leah Chase
Of all the techniques taught in culinary schools and beginner cookbooks, the one that irks me the most is the tomato concassé, in which you remove the skin, seeds, and juice—and along with them, much of the flavor, texture, and joy—of the tomato.
Rice & Chickpea Pancakes With Juicy Tomatoes
This recipe is a celebration of every bit of the tomato—juice, seeds, and all—plus a happy destination for leftover rice (or whatever grains and beans you have). It’s inspired by Leah Chase, the late chef of Dooky Chase’s Restaurant in New Orleans, whose Rice Pancakes with Ham & Tomato-Basil Sauce very much do the same.
